Green Beans are a must have summer food for me. I love how they’re piled high at the farmer’s market stand. It’s a bit like playing jenga – you have to be careful which beans you choose so as not to cause a mess. They make a wonderful side. One of my favorite ways to prepare them is Indian style.
Ingredients:
1 Pound Green Beans
2 oz onions (Vidalia is preferable)
2 oz bell pepper (yellow, purple, red for color)
1 tbsp mustard seeds
1 tbsp cumin seeds
1 tsp ginger
1 tsp garlic paste
1 tsp turmeric
Salt to taste
Pepper to taste
Chili powder to taste
Cilantro for garnish
Dice onions and add to pan with a little oil. Allow a minute or two to cook on medium low. Add in mustard seeds and cumin for 1 minute tempering.
Throw in in your bell peppers, garlic and ginger and cook for another 2 minutes. Once the onion begins to wilt a little add in your green beans, chili pepper and the tumeric. Add enough water to not quite cover the beans. Cover with lid and allow to cook for 15-20 minutes. Checking a few times to stir and adjust seasoning as needed. Feel free to also throw in some corn kernels and cilantro.
