I was skeptical but vegan gravy can be just as good as the traditional meat based. Using these recipes from Savvy Vegetarian and Food.com we made a hybrid to create a gravy with a rich, thick flavor perfect for mashed potatoes, meatloaf, lentil loaf etc. Additionally for my birthday we had collard greens, GF corn muffins, bbq chicken and mac&cheese. The recipe for mashed potatoes is after the more tag.

Vegan Gluten Free Gravy
Servings: 4
Prep Time: 10 minutes
Cook Time: 20-25 minutes

Ingredients
½ cup cashews, crushed as fine as possible
1 t garlic
1 T ginger paste
¼ cup onions, chopped fine
2 T corn flour or starch
1 T tamari
½ t paprika
cayenne pepper to taste
salt to taste
pepper to taste

Method (for Gravy):
In a sauce pan, caramelize onions on oil for 5 minutes until turning translucent. Add in ginger and garlic and allow another couple of minutes to cook. Now throw in all the spices, flour/starch, cashews mix well and toast for a minute. Add in 2 cups of water or veg stock. Bring it to a boil, the lower to a simmer and cover. Allow to thicken for around 15 minutes, stirring when necessary. If it’s chunky, run the mixture through a blender.

Mashed Potatoes Recipe (gluten free, vegan)

Servings: 4
Prep Time: 20 minutes
Cook Time: ~10 minutes

Ingredients:
6 medium potatoes, chopped small. Leave skin on if desired.
2 oz almond milk or your favorite non-dairy
3 T butter substitute (I prefer Smart Balance)
1 T garlic powder
1 t paprika
1 T ground thyme
Pepper to taste
Salt to taste

Method (for mashed potatoes):
Bring a pot of water to a boil. Add in chopped potatoes and cover. Allow to soften. If knife can be stabbed into potato easily, they’re done. ~10 minutes. Strain out water. Mash potatoes with ingredients above adjusting as needed. Make sure they’re a little on the moist side. Cover with gravy and enjoy.
