On the weekend since things are a little more relaxed I enjoyed having a something beyond cereal, yogurt, or oatmeal. In searching for a new recipe I came across this gluten free one from Hey, That Tastes Good! It’s become a go to for something easy, tasty and weekend worthy.
Instead of rice flour, I prefer half corn / half rice flours because it gets a nice golden brown color. (Half corn / half chickpea flour works well and crisps a little). Also instead of dairy milk, almond milk was used. Other tasty stuff to add include crushed walnuts or strawberries (pictured below).
