Indian Chicken Fajitas (Gluten Free)

Indian Chicken Fajitas

Indian Chicken Fajitas

This Indian-ish chicken marinade is easy to put together. It includes crushed fennel seeds which is quickly becoming one of my favorite spices for a bright, refreshing flavor. It’s a like a much lighter version of licorice. Depending on taste you can make it as spicy as you like. I recommend cooking the chicken and serving hot with caramelized onions and peppers with corn tortillas. Like a cousin to a fajita.

Servings: 4
Prep Time: 10 Minutes
Marinade Time: 1 hour
Cook Time: 10 minutes

1 pd chicken breast pieces
1 t fennel, ground
1 t garam masala
1 T cumin powder
1 T coriander powder
1 t salt
pinch cayenne pepper
pinch chili powder
1 t honey
1 T vinegar
a few ounces of water

Throw all ingredients except chicken into a bowl and mix well. If necessary add a few ounces of water to create a paste like consistency. It should be enough to cover chicken. Refrigerate for at least an hour. Preheat a pan with oil to medium heat. Add chicken pieces. Depending on thickness cook for 4-6 minutes per side until juices run clear.
