This variation of standard American tuna salad adds some zing and color from the tamarind chutney. My go-to is the Swad brand because it already has some sugar, chili powder, and garlic in it. If you can’t find this type of chutney in your area, tamarind concentrate can be used but it will be necessary to water it down. It should be about 1 t to 1/4 cup water. Also add in a teaspoon of sugar, chili powder to taste and a touch more garlic. Note: If you prefer a stronger flavor, skip the mayo/veganaise entirely.
Tamarind Tuna Salad

1 can tuna
1 t chopped onion
1 T chopped bell pepper
1 t garlic powder
1 t ginger powder
3 T mayo or veganaise
2 T tamarind chutney
salt to taste
pepper to taste
cilantro (optional)
Put all ingredients into a bowl and mix well. Serve with crackers or spread on a sandwich.
