It’s pudding time, children! (And accidental ice cream) I had no idea how easy pudding was until seeing this recipe via WednesdayChef via Smitten Kitchen. It’s only a half dozen ingredients and naturally gluten free. To make it vegan and dairy free just swap in vegan chocolate chips and non-dairy milk. The only changes I made to the recipe were switching in almond milk and adding an extra 5 minutes on the cook time. Frequent stirring helps avoid “skin” on top.
Accidental Ice Cream
We allowed the mixture to chill completely at room temperature and then transferred to the fridge. Wanting it to thicken quicker, it was then shifted to the freezer. We promptly forgot about it which was a happy mistake. Instead of regular pudding, it tasted and looked like chocolate ice cream! Or more accurately, like jello pudding pops.
I recommend eating it with fresh fruit like bananas, raspberries and blueberries. Have you had any similar happy recipe mistakes?
