Happy Easter, everyone. I was confused to learn that people don’t solely subsist on candy on Easter Sunday. While it sounds like a strange decision to not be eating confectionery eggs, I’ll be respectful.
In keeping with these “meals” my menu consists of ham with pineapple chutney glaze, red cabbage salad, garlic mashed potatoes, asparagus and a new Polish addition called salata jarzynowa. Courtesy of my local Polish deli, this mustard and mayo based vegetable salad is eaten on holidays like Christmas, Easter and and other holidays. It takes regular potato salad and throws in bits of egg, peas, carrot, apple, pickle and onion. The delicious result is variation in every bite and just a touch of kick.
