World Cup Foods: Frijoles Antioquenos (Colombian Cargamanto Bean Stew)

In the World Cup, at 4pm EST Colombia takes on Uruguay in one of the first Group of 16 matches. Uruguay is playing sans star-player and serial biter Luis Suarez. Without it’s hungriest team member and dulce de leche how can they possibly win? In this matchup I’m going for Colombia who are the clear underdogs.

The national dish of Colombia is the intense but tasty plate of protein known as Bandeja Paisa which features arepa, plantains, eggs, sausage, chicarrones and other meats. Accompanying oftentimes are Frijoles Antioquenos, a cargamanto bean stew. Click the image below for a vegan and gluten free version.
