Easy Omelette Recipe: The Green Monster! (Spinach and Bacon)

Green Monster Omelette

Green Monster Omelette

Green Monster omelette! It sounds like something from a B Movie or a pulp novel but it’s actually a delicious breakfast item . A couple years back on a brief visit to Maine, we went to a diner which served this variation of a regular omelette.

The name is an homage to the 37 foot high green wall in Fenway Park, the Boston Red Sox stadium. Notoriously difficult to hit a home run over, it’s a perpetual goal for opposing team hitters. Additionally, Wally the Green Monster is the name of the official Red Sox mascot. A long time resident of the Green Wall, he emerged in 1997.

The Recipe

Ingredients
2 eggs
3 oz spinach (remember that spinach shrinks to less than half the original size)
2 bacon strips (pork, turkey or vegetarian)
½ t garlic
1 t milk (dairy or non)
Shake of Paprika
Salt to taste
Pepper to taste

Method

Add oil and the bacon to a pan and turn to medium. (Note that a cold pan rather than preheated yields crispier bacon). Depending on level of desired crispiness, cook each side 3 minutes or more. When the bacon is half way done, add spinach to one side of the pan, not in the grease. Once cooked it shrinks down to less than half the size and darkens. Pull out bacon and spinach and put on paper towels.

Preheat an omelette pan on medium-low with oil. Crack eggs into a mixing bowl. Add in a touch of your favorite milk. Put in your garlic, salt, pepper and any other desired seasoning. Whisk contents of bowl vigorously until well blended. Place egg into warmed up pan. Cook for about 2 minutes. It should visibly solidify. Now flip over egg. Allow that side to cook for about 2 minutes. Now place your spinach and bacon in the middle and fold over. Remove from heat and place on place. Serve alongside toast and home fries/breakfast potatoes.

Food Song of the Month: Newbeats “Bread and Butter”

The classic song “Bread and Butter” by the Newbeats always puts a smile on my face. In seeing the video, do you expect that voice from lead singer Larry Henley? This, the Shreveport trio’s best known song, was released in 1964 reaching #2 on the billboard charts in the U.S.

Indian Mustard Greens Recipe (Gluten Free, Vegan)

Indian Mustard Greens Recipe (Goes Great with Cholar Dal)

Indian Mustard Greens Recipe (Goes Great with Cholar Dal)

Mustard greens never factored into my regular Bengali diet growing up. The leafy green king at home was generally spinach. Thanks to the many Punjabi owned restaurants in Manhattan and Queens I’ve now learned about the famous “sarson ka saag.” Mustard greens as the name implies are very sharp, almost horseradish-y in taste but satisfying, especially on cold nights. Below is a modified version of the traditional recipe. Adjust spinach amount to balance out mustard greens according to taste. The recipe below is gluten free and vegan as long as a GF/Vegan friendly “butter” is used such as Earth Balance or Smart Balance Light. The picture is also with cholar dal previously written about here.

Ingredients
6 oz frozen mustard greens, chopped small
8 oz spinach, chopped small
½ medium onion, chopped
½ tomato, chopped
1 T ginger
1 T cumin seeds
1 T ginger
lemon juice to taste
salt to taste
butter (optional, makes it richer/creamier)
chili powder or fresh chili to taste

Method

Cook onions on medium low for 5 minutes. Next add ginger and cumin seeds and roast for a 2 minutes. Next add in other ingredients. Add about a half cup of water. Cook covered for about 20 minutes. Once the tomato begins to turn translucent it’s time to blend. Blend pan contents (in batches if necessary) and pour back into pan. Cook for an additional 15 minutes. Leaves will begin to wilt. Add additional lemon juice for more sour flavor. Serve with rice or roti.

Cisco Brewers Summer of Lager (Massachusetts, 5.6% ABV)

Summer of Lager

Congratulations to the Baltimore Ravens on the hard fought Superbowl win and for being the only team with a literary reference. This is one of the beers I check out during the big game along with Joe Mama’s Milk.

Perhaps it was the Jacoby Jones record setting 108 yard kick off return/TD but this beer was fantastic. Cisco Brewers Summer of Lager is a refreshing and light tasting with a slight maltiness. It’s very heavy on honey notes with a crisp citrusy finish. It pours a light amber color with medium head. Maybe this is a new good luck beer? Here is a link to their beer selection.

Here are couple of other favorable reviews on this beer.

Joe Mama’s Milk Stout Review (8%, Keegan Ales, Saratoga Springs, NY)

Joe Mama’s Milk is another great beer Keegan Ales, the makers of Mother’s Milk. It pours a respectable size head. The added coffee extract is clear in both the aroma and flavor. As is characteristic of milk stouts, it’s creamier than standard stout cousins. It’s super drinkable with a very negligible hoppiness. It’s actually lighter than expected considering that it’s a stout with dairy content. I’d love to get this beer again.

Here a couple of reviews in agreement. It’s actually pretty hard to find people who dislike this beer.

Ghoogni, an easy Indian snack with chickpeas (Gluten Free, Vegan)

Ghoogni - Vegan, Gluten Free Snack

Ghoogni – Vegan, Gluten Free Snack

Ghoogi is something we’d eat often as children. It’s a healthy, inexpensive snack that’s vegan and gluten free to boot. Many people are familiar with Chana (Chole) Masala, the Punjabi cousin to Ghoogni. In restaurants it’s often served as a main dish with rice or kulcha naan bread. Ghoogni on the other hand is eaten as a snack by itself. The version below is inspired by my mother’s recipe which uses lemon juice rather than amchur (dried mango powder), tamarind or pomegranate seeds.

Ghoogni
Servings: 8
Cook Time: ~40 minutes

Ingredients
2 lbs Chickpeas
½ onion, chopped small
1 medium tomato chopped
2 bay leaves
3 cloves
1 cinnamon stick
1 T coriander powder

1 T cumin powder
1 T cumin seeds
1 T ginger
1 T garlic
2 T lemon Juice
1 T Turmeric
chili powder to or chopped chili to taste
salt
red onion for garnish (optional)
cilantro for garnish (optional)

Method

Add oil to pan. If you like spicy, add chopped chili. Throw in onions, cinnamon, bay leaves and cloves. Cook on medium low for around 5 minutes onf medium heat. Toss in cumin seeds, garlic and ginger and roast for a minute or two. Now add in all other ingredients and mix well. If necessary, add in around ½ cup of water. Cook everything until tomato breaks down and sauce thickens (around 20-30 minutes). Garnish with red onions. Eat as a snack.

Happy Superbowl Sunday. What’s for Dinner?

Huzzah! I’m not a big fan of football in general but it’s difficult to not get excited for the Superbowl. It’s once a year. It’s the biggest TV event in the country. It’s the inevitable water cooler conversation tomorrow. But more important than all that is the food eaten before and during the game.

As is traditional, I picked up 20 Atomic Wings, medium spicy. Additionally, do to an error they gave me ten Jerk Chicken Wings instead of Waffle Fries. Oh happy day! At home, we will be putting together vegan and non-vegan nachos featuring onions, black olives, cilantro and jalapeno. Lastly, we’ll be making Gluten Free Pizza with recipe to follow.

What are you folks eating today? What team are you cheering for in Superbowl XLVII? No wagering for me but I’m going for the Baltimore Ravens. I’m not a betting man but Jerry Brown, Governor of California is a strange man at times. San Francisco is great, and Patrick Willis was very productive on my fantasy football team but I must cheer for fellow East Coasters. Please don’t hate me.

Ilopart Rose Brut 2005 (Spain)

Ilopart Rose Brut 2006

Ilopart Rose Brut 2006

A gift from an old work place, this bottle laid dormant for years on the modest RoodonFood wine rack. Occasionally I’d notice and make noises about trying it sometime. A thick layer of dust accumulated. Sometimes the Illopart was the only inhabitant on the rack and yet it was still ignored. Well, as this is a drink often consumed on occasions, it just so happened that an one arose – the birth of my niece!

The sparkling wine has a pretty, well, rose color. It’s comfortably carbonated (potential band name?) and a little dry with hints of sweetness. It’s fruity, and oddly tastes young. The Ilopart Rose Brut retails for around $20 and is a product of Spain. I’d definitely be happy to try this sparkling wine again and other Rose Bruts.

Here is another mostly positive review of Ilopart.

30 Rock Finale: No More Food Jokes

It’s sad to see the NBC sitcom 30 Rock end. The Tina Fey created show never became a hit exactly but it did win a ridiculous amount of awards. Despite being about the production of a SNL type of comedy show it didn’t feel pretentious. In fact, sometimes half the jokes seemed food related. After 7 seasons, it’s going to be difficult to replace.

On a related note, Ben & Jerry’s will be introducing a 30 Rock flavor in February. It’s a lemon Greek frozen yogurt with blueberry lavender swirl inspired by Liz Lemon. I wonder if Alec Baldwin will run for Mayor of New York as rumored?

After the jump are a few favorite food related clips from the show.
