Balaji Wafers, Magic Masala Flavor Review (Gluten Free, Vegan Snack)

Magic Masala! Source: Balaji

These Balaji “wafers” were picked up at Patel Brothers in Jackson Heights for $1.49. The wafers are actually potato chips (I wasn’t aware the words are used interchangeably). The flavor, masala munch is delicious. The ingredients contain no gluten and have a splendid balance of sweet and sour owed largely to the sugar, chilly powder and mango powder. They’re ridged which for some reason makes them more fun. I highly recommend having these alongside a sandwich for contrast. The crunch is respectable. I have to mention Balaji’s great corporate slogan: Any Time Crunchy, All Time Fresh. Grammatically silly but puts a smile on your face. The next time in Jackson Heights I’m picking up a bunch of these bags.

The Shelf Life of Food

I came across this chart on the shelf life of food from the Low Down Blog via Visual.ly.

It shows how long common foods last in the pantry, in the fridge and freezer. I wasn’t aware that bananas can be frozen for 2-3 months, let alone apples for up to a year. I would dispute freezing tomatoes though which the chart says can be frozen 8-12 months. I frozen a whole tomato for a week and it felt like a water balloon – perhaps best suited for stew? Have you tried freezing veg/fruit? What was the result?

The Calming Effect of Tea When It’s Time to Write

The calming effect of tea

The calming effect of tea

I set a kettle of tea in the early evening almost every day. Cold weather is part of it, but it also serves as a marker. Tea tells my brain that it’s time to finish day job stuff in favor of my own blogging and writing projects. While mint tea is known to calm nerves, anxiety, even the digestive system I like  variation with flavors like Lipton green tea purple acai, orange jasmine, PG Tips, or mango. The type of tea doesn’t matter. All of them provide the the same “switching gears” calming effect at least in the early evening.

To further set the writing mood, I like to listen to instrumental music such as Thomas Newman (Soundtracks), Chopin, Schoenburg, Resphighi (Western Classical) or someone like Explosions in the Sky (sometimes called post rock, and known for the theme to Friday Night Lights). I don’t know if it qualifies as Pavlovian conditioning but tea + music has worked for me.

Do you have a ritual to let yourself know it’s time to blog/write?

Banana Pancakes Recipe (Gluten Free, Vegan)

GF Vegan Pancakes

GF Vegan Pancakes

On the weekend since things are a little more relaxed I enjoyed having a something beyond cereal, yogurt, or oatmeal. In searching for a new recipe I came across this gluten free one from Hey, That Tastes Good! It’s become a go to for something easy, tasty and weekend worthy.

Instead of rice flour, I prefer half corn / half rice flours because it gets a nice golden brown color. (Half corn / half chickpea flour works well and crisps a little). Also instead of dairy milk, almond milk was used. Other tasty stuff to add include crushed walnuts or strawberries (pictured below).

Vegan Gluten Free Gravy and Mashed Potatoes Recipe

Collard Greens, Mac & Cheese, Corn Muffins, BBQ Chicken, Mashed Potatoes and Vegan Gravy

Collard Greens, Mac & Cheese, Corn Muffins, BBQ Chicken, Mashed Potatoes and Vegan Gravy

I was skeptical but vegan gravy can be just as good as the traditional meat based. Using these recipes from Savvy Vegetarian and Food.com we made a hybrid to create a gravy with a rich, thick flavor perfect for mashed potatoes, meatloaf, lentil loaf etc. Additionally for my birthday we had collard greens, GF corn muffins, bbq chicken and mac&cheese. The recipe for mashed potatoes is after the more tag.

Vegan Gluten Free Gravy
Servings: 4
Prep Time: 10 minutes
Cook Time: 20-25 minutes

Ingredients
½ cup cashews, crushed as fine as possible
1 t garlic
1 T ginger paste
¼ cup onions, chopped fine
2 T corn flour or starch
1 T tamari
½ t paprika
cayenne pepper to taste
salt to taste
pepper to taste

Method (for Gravy):
In a sauce pan, caramelize onions on oil for 5 minutes until turning translucent. Add in ginger and garlic and allow another couple of minutes to cook. Now throw in all the spices, flour/starch, cashews mix well and toast for a minute. Add in 2 cups of water or veg stock. Bring it to a boil, the lower to a simmer and cover. Allow to thicken for around 15 minutes, stirring when necessary. If it’s chunky, run the mixture through a blender.

Gluten Free Vegan Funfetti Cake with Frosting (Hodgson Mill)

Funfetti Cake!

Funfetti Cake!

For my birthday I wanted funfetti cake. Already a fan of Hodgson Mills cornbread, we decided to give the gluten free yellow cake mix a try. The instructions entail throwing everything into a bowl, mixing and baking. Nice and simple. As always, the only changes made were substituting almond milk in place of dairy, flax meal over regular eggs. Lastly, to give the funfetti effect a liberal amount of rainbow sprinkles were added to the batter. The flavor was delicious. It’s moist and cake-y. We will definitely buy this mix again.

Frosting
For the vanilla icing we followed this simple recipe at godairyfree.org. For the non-dairy butter Smart Balance was used. Note that the only modification was to refrigerate for an hour to help thicken.

Happy Birthday….to me.

My birthday is today, March 3rd. Rather than harping on about “feeling old,” the plan is to celebrate over a homemade meal. On the menu are collard greens, macaroni and cheese, cornbread, mashed potatoes with cashewnut gravy and BBQ Chicken. For dessert, perhaps most excellent of all is funfetti cake. I’ll report back with links and/or recipes.

Until then…

Alton Brown’s Chewy GF Chocolate Chip Recipe (Gluten Free, Vegan)

Whoopie Cookies

Whoopie Cookies

In the mood for Gluten Free chewy chocolate chip cookies, we came across this recipe from Food Network’s Alton Brown. The recipe was great and satisfied the cookie craving. To make it vegan, almond milk was substituted over dairy milk and flax meal (3 T water to 1 T egg=1 egg) was used instead of eggs. Note: We did them in the whoopie pie pan because it’s more fun. Enjoy.

Food Song of the Month: The Marathons “Peanut Butter”

Happy National Peanut Butter Lover’s day! In honor of this holiday, the March Food Song of the Month is called “Peanut Butter” by the Marathons. The song made it all the way to #20 on the charts in 1961. The group also had hits under the name The Vibrations “Watusi” and as The Jayhawks “Stranded in the Jungle.” “Peanut Butter” has no double entendres, just a clean, silly song about everyone’s favorite food paste. Like many classics, the lyrics are simple and fun:

There’s a food goin’ around that’s a sticky sticky goo
(Peanut, peanut butter)
Oh well it tastes real good, but it’s so hard to chew
(Peanut, peanut butter)
All my friends tell me that they dig it the most
(Peanut, peanut butter)
Early in the morning when they spread it on toast
(Peanut, peanut butter)
I like peanut butter, creamy peanut butter
Chunky peanut butter too

Full Lyrics

The convoluted story of the Marathons’ only hit, 1961’s ‘Peanut Butter’, is that the Olympics’ record company, Arvee, needed a new release from the group while they were on the road. In the Olympics’ place, Arvee hired the Vibrations to record ‘Peanut Butter’, a virtual soundalike of the Olympics’ own ‘(Baby) Hully Gully’. ‘Peanut Butter’ reached number 20 on Arvee, but when the Vibrations’ own label discovered that its group had been moonlighting, it took over distribution of the record, issuing it on both the Chess Records and Argo labels. I love the nuttiness Peanut Butter gives to massaman curry but the best usage is in a PB&J. What do you like to add peanut butter to? Creamy or chunky?

Grilled Cheese Sandwiches and Public Transportation

“We could eat an Egg McMuffin on the train. Is there a McDonald’s around? ” Dad asked on the way to the train station. “Not in the neighborhood” I replied. We caught our train to Penn Station though without breakfast sandwich in tow. The mission was to take him for a doctor’s appointment in the Bronx and then to a couple of parts of the city and finally a special lunch of his choice.

Hungry after seeing the doc he once again inquired about the golden arches. With none around, a large bodega/deli caught his eye. We went in and ordered a grilled cheese sandwich on rye. He was in heaven. The cheese was gooey and overflowing. The rye was grilled perfectly. He said “I forgot how good grilled cheese is!”

Satisfied, we went to the WTC Memorial site. Normally free visitor passes are required from the website to enter. It being a slow day though, they provided us tickets. The memorial features two beautiful reflecting pools with cascading water falls along with a soon to open museum. My father was able to see the name of his friend that died in the North Tower. It feels well thought out and respectful.

Afterward we headed up to Times Square. My father appreciated the frenetic energy, sites and sounds. I proposed a couple favorites places to eat for lunch including Minar and Margon. Here he was from out of town and out of state, in a place with all manner of cuisine available but he saw….. the McDonald’s. We got fish bites (dubious) and small fries (tasty). Oh well, at least his craving was fulfilled.

On the ride back he mentioned, not McDonald’s but the Memorial, the grilled cheese sandwich and trains. Public transportation and deli sandwiches. Sometimes it’s the simple things. Never underestimate the corner deli/bodega.
